Banana Bread Breakfast Cookies

  • creamy peanut butter

  • 2 ripe bananas
  • 1/4 cup creamy peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup gluten free baking flour
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 cups gluten free oats
  • 1/4 cup vegan chocolate chips (optional)
  • 1/4 cup raisins
  1. Preheat the oven tp 350º and Line a baking sheet with nonstick parchment paper
  2. In a large bowl add the ripe bananas and mash with a fork and then with a hand mixer to make sure it’s lump free.

  3. Add in the rest of the wet ingredients and mix until well combined.
  4. Add in the flour, baking powder, baking soda, and cinnamon- mix until well combined.
  5. Fold in the oats, raisins, and chocolate chips until everything is fully incorporated
  6. Scoop about 2 tbsps of the mixture and add it to the baking sheet - flatten with the back of your spoon slightly to make it a little flatter.
  7. Bake at 350 for 13-15 minutes

  • if you don't like chocolate chips you can always switch them out with dried fruit - pistachios, pecans, walnuts - instead.
